Locavore Slow Cooker Beef Goulash

  • 3 lbs. stew meat, cubed (Second Wind Farm, Everson)
  • 1 Tbsp hazelnut oil (Holmquist Hazelnut Orchards, Lynden)
  • 1 large onion, thinly sliced (Full Bloom Farm, Lummi Island)
  • 2 jalapeno peppers, chopped (Acme Farms + Kitchen, Bellingham)
  • 4 cloves garlic, minced (home garden, Lummi Island)
  • 1 tsp fresh oregano (home garden, Lummi Island)
  • 1 tsp salt
  • 1 Roma tomato, diced (Terra Verde Farm, Everson)
  • 1 smoked dried cayenne pepper, finely crumbled (Rabbit Fields Farm, Everson)
  • 2 Tbsp apple cider vinegar (BelleWood Acres, Lynden)
  • ¼ cup flour (Fairhaven Organic Flour Mills, Burlington)
  • 1 cup water
  • Fresh dill (home garden, Lummi Island)
  • Sour cream (Breckinridge Farm, Everson)
  1. Place beef in 5-6 quart slow cooker. In a skillet, heat oil over medium heat. Add onion, jalapeno peppers, garlic, oregano, salt, diced tomato, and smoked pepper flakes. Cook, stirring occasionally, for 5 minutes.
  2. Mix in apple cider vinegar.
  3. Stir in flour, mixing well, then whisk in water, scraping up brown bits from bottom of pan. Bring to a boil.
  4. Pour over beef in slow cooker and stir well.
  5. Cover and cook on low for about 8 hours, or on high for about 4 hours, until beef is tender.
